
Banana Pudding Dessert
The traditional banana pudding usually contains egg and dairy, which is not suitable for vegan. Here’s an alternative approach for creating a vegan adaptation of this classic dessert!
Ingredients:
For Pudding Base
- 400g of Gutsuka Plain Coconut Yogurt
- 3 tbsp cornstarch
- 2 tbsp brown sugar
- A pinch of salt
- A dash of turmeric for color (optional)
- 1/2 tsp of vanilla extract (optional)
- 300ml vegan whipped cream
For Topping
- Choice of cookies/wafers/nuts
- 2-3 bananas sliced & caramelised with sugar
- 150g cookies of your choice
- Walnuts

Method:
- The Pudding Base: In a medium saucepan, combine the Gutsuka Plain Coconut Yogurt, cornstarch, brown sugar, salt, and turmeric. Whisk the mixture constantly over medium heat until it becomes thick and creamy.
- Cool & Flavor: Remove the pan from the heat and stir in the vanilla extract. Allow the pudding to cool for 10–15 minutes; this helps the layers stay distinct during assembly.
- Prep the Layers: While the pudding cools, whip up the vegan whipped cream and caramelise the sliced bananas.
- Fold & Mix: In a large bowl, combine the pudding with the whipped cream. Stir well.
- Assemble: In individual glasses or jars, layer your ingredients. Start with crushed cookies, followed by caramelised bananas, then 1–2 tablespoons of the pudding mixture. Repeat these layers until the jars are full.
- Garnish & Serve: Finish with a sprinkle of walnuts and more cookie crumbles, extra banana slices. Best served chilled!
