Avocado Lime Frozen Coyo
This Creamy Avocado & Lime Frozen Yogurt combines the richness of ripe avocados with the smooth, plant-based Gutsuka Plain Coconut Yogurt. It’s zesty, refreshing, and incredibly smooth. Perfect for those sunny Malaysian afternoons when you need a dairy-free treat that actually satisfies.
Ingredients:
- 2 cups of Gutsuka Plain Coconut Yogurt
- 1 & 1/2cup avocado chunks
- 1/4 cup lime juice
- 3 tbsp maple syrup
- Pinch of salt

Method:
- The Base Mix: In a Vitamix or high-speed blender, combine the Gutsuka Plain Coconut Yogurt, avocado chunks, lime juice, maple syrup, and a pinch of salt. Blend on high until the mixture is completely smooth.
- Churning: Turn on your ice cream maker and pour the mixture in while it’s running. Churn for 15-20 minutes. Watch your ice cream maker to make sure it keeps churning. Use a spatula to scrape off the mixture if it’s not moving.
- Set & Freeze: For a soft-serve texture, enjoy immediately! For a traditional ice cream consistency, transfer the mixture into a chilled loaf pan or bowl and freeze for 60 minutes.
- Serving Tip: Because this recipe is natural and dairy-free, it can get quite firm in the freezer. If storing long-term, let it defrost on the counter for 5-10 minutes before scooping for that perfect, creamy finish.
Pro-Tip: If you don’t have an ice cream maker, you can still enjoy this! Simply pour the mixture into a shallow container and freeze, stirring vigorously with a fork every 30 minutes for 2-3 hours to break up the ice crystals and achieve the creamy texture.
